If the form of acid is a high Malic that Ph will come around in fermentation
In my experience this is quite a unique vintage. We are seeing phenolic ripeness and sugars are speeding up but we are not seeing dehydration In most cases unless the Vineyards are very young.
I agree with John if the flavors are good pick it now
