Hello, everyone:
The SCMWA recently held a teleconference with Clark Smith on smoke taint
and is providing the recording for all to view. The discussion addresses:
- the vineyard
- understanding testing and the results
- vinification
- treatment
- post-treatment mitigation
As the science and understanding of smoke taint is evolving, Clark
points out that "the grapes are coming, and this will be a year of 'art
over science'". Nevertheless, he shares as much of the science as is
available and his own expertise to give you a sound basis for creating
art during a season that presents many questions and potential
difficulties. This is a valuable presentation for all growers and
winemakers especially this year. It fills in some of the gaps and
provides more specifics following the CAWG seminar last week.

Clark Smith taught the Fundamentals of Wine Chemistry for UC Davis for
24 years, is the author of /Postmodern Winemaking/, and consults on the
technical aspects of winemaking. During his involvement with
AppellationAmerica.com he helped to identify the sub-regions of the
Santa Cruz Mountains, and was the featured speaker at Pinot Paradise.
