Hi all
Just to clarify I am actually looking to do a custom crush where I can have a say over how the wine is made (minimum inputs/ no synthetics) and store the wine until it's bottled so that it is legal for purchase in the future.
I hope to have a location some place in the next year that is bonded but my current site is still not ready for commercial operation... the grapes are coming on strong now!!! So I am looking for plan B~ pronto.
I hope to have 2-4 tons ~ 4-6 barrels? I just need a location so I can figure out the barrel program. I am planning on micro harvesting so this will not all come in at once, chardonnay and pinot noir.
I understand that there would be rental space for storage and leasing for the crush and we are willing to pay, I am just looking for something that is reasonably priced and local so we can see some fruition of this canopies labor.
As you know if I wait another year then I am looking at a 2019 release which may make this project unsustainable for me personally?
It's been a lot of work to get the canopy to this point, so any help is appreciated. I am just trying to get a label of the ground that supports the terroir of the site and the magic of this area on a grassroots budget!!! Oh and w ith the property owner's blessing/ support of course ;)
