What: Wine Flavor 101 Technology Update: Flash Detente
Where: UC Davis Conference Center

We listened to your requests for information, and so Technology Updates will
become part of our Wine Flavor 101 series. We DO pay attention to your
comments.
This unique Wine Flavor 101 Technology Update will focus on the recent
upsurge in the use Flash Détente, a relatively new technology in winemaking,
now in wide use on the West Coast. We'll have both UCD faculty and wine
industry professionals presenting the technical and practical aspects of
flash détente, or thermovinification. A panel of winemakers will discuss
their experience and introduce an extensive tasting of red and white
varietals from many areas of California, produced with flash détente using
various production strategies to enhance quality.
VENSource and The Department of Viticulture & Enology at UC Davis are proud
to present these very popular Wine Flavor 101 Technology Update series of
classes to the wine industry. As such, they are targeted to wine
professionals with some chemical and technical background. These seminars
are very popular and often sell out before the event date, so be sure you
register early.

Extensive tasting of red and white
flash-detente wines from diverse West Coast AVAs, using various production
strategies to achieve differing styles and flavor profiles. This will be the
most comprehensive group of samples representing a specific winemaking
technique that we have shown in the Wine Flavor 101 series.
